Jacques Lassaigne is a 4.7-hectare family vineyard located in Montgueux, celebrated for its exceptional terroir and prime southeastern exposure in the Cotes des Bars region. Entirely dedicated to Chardonnay, this vineyard was once reserved for the prestigious Montrachet of Champagne and lies near Troyes, the former capital of Champagne. Although part of the Aube department, Montgueux is situated further north than the more commonly recognized Aube regions, which are known for Pinot Meunier wines.

The terroir in Montgueux closely resembles that of Le Mesnil, sharing the same limestone vein that provides an exceptional foundation for great Champagne. The wines here often exhibit an intense backbone of acidity, and due to its southern location, ripening is less challenging compared to the famed Côtes des Blancs. The non-vintage Blanc de Blancs is a standout, blending nine different vineyard sites and two successive vintages.

Under the guidance of Emmanuel Lassaigne, Jacques’ son, the winery embraces a bold winemaking philosophy. Since he began working the vines in 1999, Emmanuel has focused on crafting wines from individual parcels, an approach that initially baffled his neighbors. He makes all critical decisions independently and experiments with unconventional methods, knowing that the results of his changes may not be realized for years.

Emmanuel’s winemaking process begins with fermentation using only indigenous yeast. He introduces minimal sulfur at pressing to prevent oxidation, and no additional sulfur is added thereafter. Uniquely, he disgorges all bottles by hand, a practice that allows for a more authentic product without the need for topping up after disgorgement.
