
David and Naïma Didon have carved out their own quiet corner of paradise in Chassey-le-Camp, tucked away in the Côte Chalonnaise. On an old farm surrounded by forest, far from the influence of neighboring vineyards, they tend just under two hectares of vines with care, conviction, and zero compromise. Here, nature leads — and the Didons follow, guided by the rhythms of biodynamics and a deep respect for the land.
David brings with him years of experience from Domaine de Montille in Volnay, where he steered the estate’s transition to biodynamics. But it was a friendship — with natural wine pioneers Julien Altaber and Dominique Derain — that lit the spark. At Domaine Didon, everything is done with intention: spontaneous fermentations, whole clusters, no additives, no fining, no filtration, and not a single new barrel in sight.
